Choy sum (also spelled choi sum or quot;cai xinquot; using Pinyin) is a leafy vegetable commonly used in Chinese cuisine. It is a member of the genus Brassica of the mustard family, BrassicaceaeOne of the seemingly endless members of the Asian green family, choy sum is a bok choy variety that bears flowers if not harvested quickly enough.
